Mint Chocolate Chip "Grinchmas" Cookies

Unlike the retail stores who throw up their decorations after Halloween (really?), I usually don’t start feeling festive til a little closer to said holiday.

Smells Like Christmas!

I got the idea for these Grinchmas Cookies from a post I saw on Pinterest, and wanted to give it a whirl.  I used a simple sugar cookie recipe and added semi-sweet chocolate chip morsels, Andes Crème de Menthe chips, peppermint extract, and a wee bit of green food coloring to add to the festiveness.

Has everyone finished Christmas shopping?  I sadly have not even started, save for two gifts.  Hope Santa gives you what you always wanted this year!
